Fortaleza by Don Arturo wasn't originally supposed to be a restaurant.

Chef Don Arturo Garcia Acevedo and the team behind Don Arturo Events were searching for a commercial kitchen to expand their catering and private-event business. They needed more room to prepare food, store equipment, and accommodate larger events when someone suggested another possibility: opening their own restaurant.

The idea quickly took shape, and Fortaleza opened in Norman in October 2026 with a menu inspired by Don Arturo's decades of culinary experience and a desire to introduce diners to more of Mexico's regional cuisine.

Meet Chef Don Arturo

Don Arturo's culinary career began at just 15 years old, when he started working in a butcher shop. Born in Guadalajara and raised in Aguascalientes, Mexico, he worked his way into professional kitchens and became a sous chef by 17. Two years later, he opened Tacos Jr. in Tijuana, a venture that grew from a single food truck into a restaurant business with multiple locations.

His career also included working in the kitchens of Fiesta Americana hotels across Mexico before eventually taking him to San Diego and Oklahoma. Along the way, he developed an appreciation for the distinct flavors and cooking traditions found throughout the country, particularly in Baja California, where seafood is a staple of the regional cuisine.

At Fortaleza, Don Arturo draws on that experience to create a menu featuring seafood, premium cuts of beef, and dishes that go beyond what many Oklahomans might expect from a Mexican restaurant.

The restaurant itself reflects that same interest in offering something different. Inspired by contemporary restaurants in Mexico City, Fortaleza features a modern dining room and a Spanish-language menu, both intentional choices meant to give guests a taste of dining in Mexico.

Despite its more upscale atmosphere, Fortaleza isn't reserved for special occasions. During our visit, one of the owners explained that someone stopping in after a movie in shorts and a T-shirt should feel just as welcome as guests dressed up for dinner. The team hopes Fortaleza will become somewhere people feel comfortable returning to, whether they're celebrating something special or simply looking for a good meal.

What to Order at Fortaleza

When asked what first-time guests should try, Don Arturo immediately recommended the octopus, reflecting the coastal cooking that has influenced much of his career.

The ribeye tacos have also quickly become a favorite. Rather than using traditional carne asada, the kitchen prepares thinly sliced ribeye, allowing the tenderness and flavor of the beef to take center stage.

And there's more on the way. Don Arturo is developing filet mignon tacos with chimichurri, along with salpicón, a shredded beef dish prepared with vegetables and a dressing of citrus, olive oil, and vinegar.

The latter is particularly meaningful to the team. Although salpicón is commonly served at weddings, baby showers, and other family celebrations in Mexico, the owners explained that it's something they rarely encounter on restaurant menus. Bringing dishes like this to Fortaleza allows them to share foods they've enjoyed for years with diners who may be trying them for the first time.

Don Arturo also plans to introduce weekly chef specials, with the possibility of adding popular dishes to the permanent menu. For guests, the changing selections offer a chance to explore more of Don Arturo's cooking with each visit.
